Beers deserve their shot at redemption. Not every bottle is created equally, just as taste buds are never the same from day to day. (It has also been argued that bottle-shock can also happen to beer, though I would argue against this when purchasing from the LCBO. It can take weeks for beers to be tested and reach the shelves.) After an improved experience with the Brooklyn Black Chocolate Stout the night before, the timing seemed right to re-evaluate the Het Anker Gouden Carolus Classic. (I had also purchased two bottles way back in October and couldn’t just let the other one go to waste, even if it wasn’t tasty.)
The sweetness was still present, but subdued. To match the ruby colour, the taste of cherries hits the tongue first and erupts to a syrupy malt explosion. Still a bit too much with a need for a dry finish, but much better. You have been redeemed!
