Yes, I should have been out supporting Ontario Craft Beer Week, but my work schedule would not allow it. There was barely enough time to relax at home and drink this Charlevoix Dominus Vobiscum Tripel before heading to bed. Luckily I found a way to squeeze it in, because this is one hell of a tasty tripel. A cloudy straw colour, the beer was blessed with a great head that looked like a white fluffy cloud sitting atop the liquid. Strong aromas of honey, pepper and pear. Pepper is in the foreground of flavours and shows that this isn’t going to be a sickly sweet tripel (it is also quite bready, which helps). There is still a nice fruitiness to it, with a crisp apple flavour and a little syrupy honey. The finish is really dry and refreshing. One of the better tripels I’ve had recently, mainly because it toned down the sweetness and was packed with different flavours.
